Chicken with Creamy Mustard Sauce Recipe



Recipe Ingredients

    • 2 Tbsp flour
    • 1⁄2 tsp kosher salt
    • 1⁄4 tsp freshly ground pepper
    • 4 boneless, skinless chicken breasts (about 5 oz each)
    • 2 tsp olive oil
    • 1⁄4 cup dry white wine or chicken broth
    • 1⁄4 cup chopped shallots
    • 1⁄2 cup heavy cream
    • 1⁄4 cup water
    • 1 1⁄2 Tbsp Dijon mustard
    • 1 tsp dried tarragon

Recipe Preparation

    1. Mix flour, salt and pepper on a sheet of wax paper. Press chicken into mixture to coat.

    2. Heat oil in a large nonstick skillet. Add chicken and cook 7 to 9 minutes, turning once, until browned and cooked through. Remove to a plate.

    3. Add wine and shallots to skillet; cook 1 minute or until shallots are almost tender. Add cream, water, mustard and tarragon; cook, stirring occasionally, about 2 minutes or until sauce thickens slightly and shallots are tender.

    4. Pour any accumulated chicken juices from plate with chicken into sauce; season with additional pepper to taste if desired. Spoon over chicken.



Molasses & Balsamic Chicken Recipe


Molasses & Balsamic Chicken Recipe


Recipe Ingredients

    • 1⁄2 cup molasses
    • 1⁄2 cup balsamic vinegar
    • 1 tsp grated orange zest
    • 4 each chicken drumsticks and thighs (2 1⁄2 lb), skin removed
    • 1⁄2 tsp kosher salt
    • 1⁄2 tsp freshly ground pepper

Recipe Preparation

    1. Mix molasses, vinegar and orange zest in a small bowl until blended. Pour 1⁄4 cup into a 1-gallon ziptop bag. Add chicken; seal bag and turn to coat. Refrigerate at least 1 hour.

    2. Meanwhile, in a 1-qt saucepan, simmer remaining molasses mixture 5 minutes or until slightly thickened.

    3. Heat outdoor grill or grill pan. Place chicken on tray and sprinkle both sides with salt and pepper; discard bag and its contents. (Tip: Line the tray with foil before adding chicken; when chicken is done, just discard the foil and you have a clean serving tray.)

    4. Grill chicken 20 minutes, turning with tongs as needed. Brush with some of the thickened molasses mixture; grill 5 minutes more or until instant-read thermometer inserted in center registers 160ºF. Serve chicken drizzled with remaining molasses mixture.

Pork Roast with Apples & Sage Recipe



Recipe Ingredients

    • 4 tsp chopped fresh sage
    • 1 Tbsp minced garlic
    • 1 tsp kosher salt
    • 1⁄2 tsp freshly ground black pepper
    • 1 2 3⁄4-lb boneless pork loin roast, well trimmed
    • 1 jar (12 oz) pork gravy or bistro au jus (we used Heinz)
    • 4 medium Gala apples

Recipe Preparation

    1. Mix sage, garlic, salt and pepper in a small cup. Spread over top of pork.

    2. Place gravy in a 4-qt or larger slow cooker. Core 2 apples and coarsely chop; add to gravy. Place pork on top.

    3. Cover and cook on low 5 to 7 hours. Core and cut remaining 2 apples into 8 wedges apiece; add to slow cooker for the last hour of cooking.

    4. Remove pork and apple wedges to a tray; let stand. Remove chopped apple with slotted spoon to a food processor; purée. Add 1 cup of cooking liquid to apple purée; warm. Slice pork; serve with apple wedges and apple gravy.

Recipe Ingredients

    • 1 1/2 cups marinara sauce
    • 1/2 cup thinly sliced onions
    • 1/4 cup tomato paste
    • 1/4 cup red or white wine
    • 1/2 tsp each dried rosemary and kosher salt
    • 8 small chicken thighs, (about 1 3/4 lb), skin removed
    • 8 oz mushrooms, cut in half or quartered if large

Recipe Preparation

    1. Mix marinara sauce, sliced onions, tomato paste, wine, rosemary and kosher salt in a 4-qt or larger slow cooker.

    2. Add chicken and mushrooms; toss to mix and coat.

    3. Cover and cook 2 1/2 to 3 1/2 hours on high or 5 to 8 hours on low until chicken and onions are tender. Remove to a serving platter.

Recipe Ingredients

    Herb Fillet of Beef

    • 1⁄4 cup whole-grain Dijon mustard
    • 3 Tbsp mixed chopped fresh herbs (sage, rosemary and thyme)
    • 1 Tbsp extra-virgin olive oil
    • Vegetable oil, for browning
    • 1 oven-ready, tied fillet of beef roast (4 lb)
    • 1 tsp kosher salt
    • Freshly ground black pepper

    Horseradish Sauce

    • 1 cup reduced-fat sour cream
    • 1⁄2 cup cream-style horseradish sauce
    • 11⁄2 Tbsp chopped parsley
    • 11⁄2 tsp honey mustard
    • Freshly ground black pepper

Recipe Preparation

    1. Heat oven to 450°F. In a small bowl, mix mustard, herbs and olive oil.

    2. Heat a large Dutch oven over medium-high heat. Add enough vegetable oil to just coat bottom of pan. Pat beef dry with paper towel and season with salt. Sear beef, turning every 4 minutes, until all sides are well browned, about 12 minutes total. Transfer beef to a roasting rack set in a shallow roasting pan and brush with the mustard mixture.

    3. Roast the beef 15 to 20 minutes or until an instant-read thermometer inserted in center registers 125°F, for medium-rare. Let beef rest on a cutting board, loosely tented with foil, 15 to 20 minutes.

    4. Meanwhile, to make Horseradish Sauce, whisk all ingredients in a medium bowl until blended.

    5. Slice beef into thick slices. Serve warm or at room temperature with horseradish sauce.

Recipe Ingredients

    • 1 can (10 3⁄4 oz) condensed golden mushroom soup
    • 1⁄3 cup dry red wine, such as merlot, zinfandel or cabernet sauvignon
    • 2 Tbsp tomato paste
    • 2 cloves garlic, minced
    • 1 tsp dried thyme
    • 3 1⁄2- to 4-lb boneless bottom round roast or chuck roast
    • 1 lb carrots, peeled and cut into 2-in. pieces, thick pieces halved lengthwise

Recipe Preparation

    1. In a 5-qt or larger slow cooker, whisk together soup, wine, tomato paste, garlic and thyme. Add beef, turning to coat. Arrange carrots around meat.

    2. Cover and cook until meat and carrots are tender, on low 8 to 10 hours or on high 5 to 6 hours.

    3. Transfer meat to a cutting board and slice. Arrange the sliced beef and carrots on a serving platter and spoon some of the gravy over the top. Serve with the remaining gravy.

Recipe Ingredients

    • 1 mango, peeled and cut into 1⁄2-in. chunks
    • 1 jar (11.09 oz) Thai Kitchen Red Curry 10-Minute Simmer Sauce
    • 1 lb skinless, boneless chicken thighs, cubed

Recipe Preparation

    1. Put 1/2 cup of the mango and the sauce in a food processor or blender and process until smooth.

    2. Heat 1 tsp oil in a large nonstick skillet over medium-high heat. Add chicken and sauté 5 minutes, or until browned.

    3. Add sauce mixture and bring to a simmer. Simmer 3 minutes, or until chicken is cooked through. Stir in remaining mango. Serve in lettuce leaves or over rice sprinkled with chopped cilantro if desired.

Ingredients:
Salt
Black Pepper, freshly ground
250g Sour Cream
Signature Range Pita Bread, toasted
200g Smoked Salmon Pieces, coarsely mashed
Zest of 1 lemon + lemon wedges for serving

Directions:
Mix all ingredients except pita bread and lemon wedges together in a bowl with 3 tbsp finely chopped chives.

Chill and serve with pita bread and lemon wedges.

Salmon Vol au Vents Recipe


Ingredients:
Salt
Freshly Gound Black Pepper
3 tbp Olive Oil
Salmon Fillet, boned and diced 3cm
Zest of 1Lemon pus extra for serving
3 tbsp Capers
100mls Fish Stock
300mls Fresh Cream
4 medium Select Vol au Vent Cases, heated in the oven, ready when needed
2 Spring Onions, thinly cliced, plus extra for serving

Directions:
Heat the oil over moderate heat and add the salmon, spring onions, zest and capers.

Fry until the salmon has coloured all over and add the stock.

Mix well, let it bubble for 10 seconds then add the cream.

Season and boil until reduced and thickened a little. Serve the salmon and sauce in the hot Vol au Vent cases.

Sprinkle with extra zest and spring onions if desired.


Chicken Nibbles Recipe

Ingredients:
¼ c Soy Sauce
½ - 1 tsp Grated Fresh (or dried) Ginger
2 Cloves of Garlic finely chopped
2 tbsp Honey
1 tbsp Curry Powder
1kg Chicken Nibbles

Directions:
Combine soy, ginger, garlic, honey and curry powder in a large bowl.

Add chicken wings and turn over so that the chicken wings are coated.

Tip it all into a roasting dish and bake for 45 minutes at 160°c turning frequently for the last 15 minutes.



Carrot & Orange Soup Recipe


Carrot & Orange Soup Recipe

Ingredients:
1 Onion, finely chopped
Salt
Pepper
3 tbsp Light Olive Oil
6 Medium Sized Carrots, peeled and sliced
4 c Chicken Stock
Cream
1/4 c Small Black Olives drained
1/2 c Orange Juice
Zest of 1 Orange

Directions:
Heat the oil over moderate heat and add the onion and orange zest.

Fry gently, without browning, until the onion is soft.

Add the carrots and stock, bring to the boil and boil gently for about 15 minutes until the carrots are tender.

Remove from the heat and puree until smooth in a blender or food processor.

Place back on the heat, in a clean saucepan and bring to the boil. Remove from the heat and add the orange juice, do not reheat otherwise the orange flavour will dissappear.

Taste, season and serve with a little cream drizzled onto the soup and a sprinkling of chives.
