Pork Roast with Apples & Sage Recipe



Recipe Ingredients

    • 4 tsp chopped fresh sage
    • 1 Tbsp minced garlic
    • 1 tsp kosher salt
    • 1⁄2 tsp freshly ground black pepper
    • 1 2 3⁄4-lb boneless pork loin roast, well trimmed
    • 1 jar (12 oz) pork gravy or bistro au jus (we used Heinz)
    • 4 medium Gala apples

Recipe Preparation

    1. Mix sage, garlic, salt and pepper in a small cup. Spread over top of pork.

    2. Place gravy in a 4-qt or larger slow cooker. Core 2 apples and coarsely chop; add to gravy. Place pork on top.

    3. Cover and cook on low 5 to 7 hours. Core and cut remaining 2 apples into 8 wedges apiece; add to slow cooker for the last hour of cooking.

    4. Remove pork and apple wedges to a tray; let stand. Remove chopped apple with slotted spoon to a food processor; purée. Add 1 cup of cooking liquid to apple purée; warm. Slice pork; serve with apple wedges and apple gravy.

Recipe Ingredients

    • 1 1/2 cups marinara sauce
    • 1/2 cup thinly sliced onions
    • 1/4 cup tomato paste
    • 1/4 cup red or white wine
    • 1/2 tsp each dried rosemary and kosher salt
    • 8 small chicken thighs, (about 1 3/4 lb), skin removed
    • 8 oz mushrooms, cut in half or quartered if large

Recipe Preparation

    1. Mix marinara sauce, sliced onions, tomato paste, wine, rosemary and kosher salt in a 4-qt or larger slow cooker.

    2. Add chicken and mushrooms; toss to mix and coat.

    3. Cover and cook 2 1/2 to 3 1/2 hours on high or 5 to 8 hours on low until chicken and onions are tender. Remove to a serving platter.

Roasted Herb Fillet of Beef with Horseradish Sauce Recipe


Recipe Ingredients

    Herb Fillet of Beef

    • 1⁄4 cup whole-grain Dijon mustard
    • 3 Tbsp mixed chopped fresh herbs (sage, rosemary and thyme)
    • 1 Tbsp extra-virgin olive oil
    • Vegetable oil, for browning
    • 1 oven-ready, tied fillet of beef roast (4 lb)
    • 1 tsp kosher salt
    • Freshly ground black pepper

    Horseradish Sauce

    • 1 cup reduced-fat sour cream
    • 1⁄2 cup cream-style horseradish sauce
    • 11⁄2 Tbsp chopped parsley
    • 11⁄2 tsp honey mustard
    • Freshly ground black pepper

Recipe Preparation

    1. Heat oven to 450°F. In a small bowl, mix mustard, herbs and olive oil.

    2. Heat a large Dutch oven over medium-high heat. Add enough vegetable oil to just coat bottom of pan. Pat beef dry with paper towel and season with salt. Sear beef, turning every 4 minutes, until all sides are well browned, about 12 minutes total. Transfer beef to a roasting rack set in a shallow roasting pan and brush with the mustard mixture.

    3. Roast the beef 15 to 20 minutes or until an instant-read thermometer inserted in center registers 125°F, for medium-rare. Let beef rest on a cutting board, loosely tented with foil, 15 to 20 minutes.

    4. Meanwhile, to make Horseradish Sauce, whisk all ingredients in a medium bowl until blended.

    5. Slice beef into thick slices. Serve warm or at room temperature with horseradish sauce.

Recipe Ingredients

    • 1 can (10 3⁄4 oz) condensed golden mushroom soup
    • 1⁄3 cup dry red wine, such as merlot, zinfandel or cabernet sauvignon
    • 2 Tbsp tomato paste
    • 2 cloves garlic, minced
    • 1 tsp dried thyme
    • 3 1⁄2- to 4-lb boneless bottom round roast or chuck roast
    • 1 lb carrots, peeled and cut into 2-in. pieces, thick pieces halved lengthwise

Recipe Preparation

    1. In a 5-qt or larger slow cooker, whisk together soup, wine, tomato paste, garlic and thyme. Add beef, turning to coat. Arrange carrots around meat.

    2. Cover and cook until meat and carrots are tender, on low 8 to 10 hours or on high 5 to 6 hours.

    3. Transfer meat to a cutting board and slice. Arrange the sliced beef and carrots on a serving platter and spoon some of the gravy over the top. Serve with the remaining gravy.

    • 1 mango, peeled and cut into 1⁄2-in. chunks
    • 1 jar (11.09 oz) Thai Kitchen Red Curry 10-Minute Simmer Sauce
    • 1 lb skinless, boneless chicken thighs, cubed

Recipe Preparation

    1. Put 1/2 cup of the mango and the sauce in a food processor or blender and process until smooth.

    2. Heat 1 tsp oil in a large nonstick skillet over medium-high heat. Add chicken and sauté 5 minutes, or until browned.

    3. Add sauce mixture and bring to a simmer. Simmer 3 minutes, or until chicken is cooked through. Stir in remaining mango. Serve in lettuce leaves or over rice sprinkled with chopped cilantro if desired.

Recipe Ingredients

    • 4 (5-oz) salmon fillets
    • 1/3 cup Asian ginger salad dressing
    • 2 Tbsp clementine or orange juice
    • 1/2 cup thinly sliced red onion
    • 8 cups salad greens (we used arugula, mizuna and frisée)
    • 4 clementines, peeled and sliced
    • 1/3 cup chopped unsalted toasted almonds

Recipe Preparation

    1. Place salmon skin-side down on foil-lined rimmed baking sheet. Spoon on or brush salmon with 2 Tbsp of the dressing. Let stand 15 minutes.

    2. Put remaining dressing and the juice in a large bowl; add onions and toss to coat. Heat broiler.

    3. Broil salmon 8 to 10 minutes or until just cooked through.

    4. Add salad greens and clementines to bowl with onions; toss to mix and coat. Arrange salad on serving plates. Lift salmon off foil, leaving the skin behind. Place salmon on salad and sprinkle with almonds.

Recipe Ingredients

    • 1 pint grape tomatoes
    • 11⁄2 Tbsp chopped fresh thyme
    • Four 6- to 8-oz salmon steaks or fillets

Recipe Preparation

    1. Heat oven to 425ºF. Line a rimmed baking pan with nonstick foil.

    2. Toss tomatoes, 1 Tbsp of the thyme, 2 tsp olive oil, and 1⁄8 tsp each salt and pepper on baking pan. Roast 10 minutes.

    3. Remove from oven. Push tomato mixture to one side of pan. Add salmon to other side. Sprinkle salmon with 1⁄8 tsp each salt and pepper and the remaining 1⁄2 Tbsp thyme. Roast 10 minutes or until salmon is just cooked through and tomatoes are tender.

    4. To serve, spoon tomatoes and juices over salmon.
